Pineapple Lumps Cheesecake

I went to make our ever popular Pascal Lolly Cheesecake  for an engagement party this weekend- it's so easy to make and always impresses! But after traipsing around three different supermarkets on the lookout for Pascal Eskimos and no luck, I wasn't prepared to add a 4th supermarket to the days escapades. I frustratingly stared across the various lollies on display in front of me- and it came to me that pineapple lumps could make an pretty good substitute. Turns out- they make a perfect subsititute! Phew- crisis averted! Check out the recipe below:

Pineapple lumps cheesecake recipe


  • 1 packet malt biscuits - crushed
  •  90 g butter
  • 100ml condensed milk
  • 2x Packets of Pascal Pineapple lumps (1x packet for the base, 1x packet for decoration)
  • 2 packets Philadelphia cream cheese (500g)
  • ¼ cup castor sugar
  • 2 teaspoons gelatine
  • 1 cup whipped cream
  • 500g melted chocolate (make sure you save a little to drizzle over the top when decorating!)

Stir melted butter and condensed milk over low heat, add chopped Pineapple Lumps, and crushed malt biscuits, mix well and press into a s spring form tin, refrigerate.

 Put cream cheese into a bowl with castor sugar and mix well to combine. Add gelatine (follow instructions on packet). Fold in whipped cream and then melted chocolate. Mix well and pour into tin. Let set and then decorate with Pascall Pineapple Lumps and drizzled chocolate. Refrigerate until ready to serve. It's D-E-L-I-C-I-O-U-S!
