We made this cheesecake for Christmas and it turned out perfectly. It was absolutely delicious and the presentation was very impressive on our table. See photo below -

Ingredients:
- 1 packet malt biscuits - crushed
- 90 g butter
- 100mil condensed milk
- 170g Pascal Eskimos
- 2 packets Philadelphia cream cheese (500g)
- ¼ cup castor sugar
- 2 teaspoons gelatine
- 1 cup whipped cream
- 500g melted chocolate
Stir melted butter and condensed milk over low heat, add chopped Eskimos, and crushed malt biscuits, mix well and press into a s spring form tin, refrigerate.
Put cream cheese into a bowl with castor sugar and mix well to combine. Add gelatine (follow instructions on packet). Fold in whipped cream and then melted chocolate. Mix well and pour into tin. Let set and then decorate with Pascall Eskimos and drizzled chocolate. Refrigerate until ready to serve. Yum yum yum.
Hi Waimirirangi, yes you fold the melted chocolate into the cream cheese mixture with the whipped cream!
Do you put the melted chocolate in the mixture??
I made this for Xmas 2018, very easy to make but if your decorating it like the picture you need extra Eskimos, I can’t wait to dig in
Hi Sharon, we followed the instructions on the gelatine packet and ours set beautfully.
How much water do you add to the gelatine please, i have made this cheesecake but after 5 hours it still wasnt set so i put it in the freezer to set. Look forward to your reply.
