We have been thinking about making cheese rolls for a while and as it is a rainy old Saturday we thought there was no better time than today. Being from the South Island, but now living in Auckland, we know that a lot of North Islanders have not tried this ultimate wintery comfort food, and really don't know what they are missing out on. So in the interests of inter-island sharing we have provided the recipe below. Note that these freeze well too - freeze before cooking in the oven and just take out as many as you need :)
375ml can Carnation Creamy Evaporated milk
1 pkt Maggi onion soup mix
2 cups grated cheese
1 loaf of sandwich sliced white bread
30g melted butter (optional)
Combine all but butter in a medium sized saucepan and cook over low heat until the cheese melts, stirring constantly. This mixture will become thick and gluggy. Allow to cool.
Spread the cheese mixture over the bread slices, roll up and if desired brush with melted butter to give a golden toastie topping.
Grill for 2-3 minutes on each side until golden brown, (remember to keep an eye on them)
