Who remembers when cheese balls were the thing? My sister made one a few weeks ago for a potluck and it was devoured by all the baby boomers, who lamented on how much they had missed them. The next morning my Millennial children devoured the leftovers. So yesterday, a cold rainy day, seemed the ideal time to make my first cheese ball in a few years. It was so tasty and very easy to make, and the good thing is you just throw it together - no exact measurements needed!
Here's my version
1 carton cream cheese (not lite)
1 cup grated cheese
Finely chopped spring onion to taste
Shaved ham chopped
1/2 tsp curry powder
Approx half cup chow chow
Salt and pepper to taste
Mix all together thoroughly with a wooden spoon. Form into a ball and roll in chopped nuts. This makes one large cheese ball, or if you prefer two smaller ones. It keeps well in the fridge.
Enjoy with your favourite crackers or spread thickly on crusty French bread.
